Chicken Enchiladas

Chicken Enchiladas

Ingredients:
1 can condensed cream of chicken soup
1 can milk (why dirty a measuring cup?)
1/2 can or so of sour cream
3 quarter size dumps of chili powder (use your hand to measure)
1 pound cooked chicken, cubed
4 large flour tortillas
1-2 handfuls of shredded cheddar cheese

Directions:
Mix first 4 ingredients in a microwave safe bowl and microwave on high for a couple of minutes. Stir. If still lumpy you can microwave a couple more minutes. Stir again. Add chicken cubes and heat in microwave until warm.

Place a fair amount of the mixture onto a flour tortilla, fold and place in a microwave safe dish with sides. Repeat until done. Cover with the shredded cheese and microwave just until cheese melts.

Serve with sour cream and salsa.
 

*Children should always be supervised when preparing or cooking in the kitchen.
