Popovers

Popovers

Ingredients:
2 eggs
1 cup milk
2 cups all-purpose flour
dash of salt
dash of pepper

Directions:

Preheat the oven to 350 degrees F

Beat the eggs until they are foamy then beat in the milk.  Slowly add the flour, beating constantly until the mixture is smooth.  Season with salt and pepper then refrigerate the batter for one hour.

Using a muffin baking pan with 6 cups, put a teaspoon of oil into each of the cups and coat the sides of the muffin cup.  Do not use papers.  Place the muffin tin in the oven for 5 minutes, allowing the oil to get very hot.  Remove pan from oven (be careful as oil will be very hot).  Pour the cold batter into the hot muffin cups and place back into the oven.  Bake for 8 to 10 minutes, or until the popovers are puffy and browned.
 

*Children should always be supervised when preparing or cooking in the kitchen.
