Corn Fritters

Ingredients:
15 oz can whole kernel corn; drain and keep 1/4 cup liquid - set aside
2 medium eggs
1/2 teaspoon salt
1 cup flour
1 teaspoon baking powder
1 teaspoon sugar
2 tablespoons margarine, or as needed

Directions:
In a medium sized bowl mix the corn juice and the eggs, stirring until smooth. Add the salt, flour, baking powder and sugar and beat until there are no lumps. Add the corn and mix well. Melt 2 tablespoons margarine in a large frying pan over medium high heat. Once hot, carefully pour about 1/4 cup of batter per fritter. Cook until underside is crispy and golden brown, then flip and cook till done.

*Children should always be supervised when preparing or cooking in the kitchen.
